Caracara Hosts Mexican Cooking Class

Residents came to class despite the weather.

held its first cooking class on Saturday.

Despite the , 19 people came to the event, which included a cooking demonstration and light luncheon.

Students learned how to make Tamal Camarones (corn husk stuffed with maseca and roasted corn, jumbo shrimp and chipotle cream), Pollo Relleno (chicken breast breaded and stuffed with Chihuahua cheese, poblano pepper and mushroom topped with tequila, mushroom cream sauce) and Tres Leches (vanilla sponge cake in three milks with fresh whipped cream) from Chef Nestor Hernandez.

"It was a great success," said Caracara owner . "We will be having at least three this year, one around Cinco de Mayo and another in October before the holidays."

The class cost $40 per person and 19 of the 20 people who signed up attended. The restaurant previously held a demonstration at which was sold out.  said they are also looking into future demonstrations at the library.
