Nutty Irishman Chef Gets Promotion

Miguel Cuevas is now bar and grill's director of food operations.

Miguel Cuevas has been promoted to Director of Food Operations at The Nutty Irishman, owner John Court said.

"He handles all of our recipes, plating, pretty much everything that we do in regards to our kitchens goes through him," Court announced in this month's Farmingdale Chamber of Commerce newsletter.

Cuevas grew up in San Diego and moved to New York in late 2001. He studied at New York Restaurant where he received an Associates Degree in Culinary Arts and graduated with honors.

Upon graduating he completed an internship at the renowned Butter in NYC. Cuevas then moved onto Jameson's, an Irish restaurant in Floral Park. That was followed by Head Baker at the Garden City Hotel and stints at Waterzooi and Novita in Garden City.

That's where Cuevas landed next as chef at The Lark Pub. Cuevas then moved to his current position at The Nutty Irishman over the summer.

"Since his arrival at The Lark we've seen wonderful growth and we're sure he can lead us into the future at The Nutty Irishman," Court said. "We've already designed a new menu and made some drastic changes to our catering program. Both have been getting rave reviews and the repeat business we've been getting speaks for itself."
